125g butter (room temperature)

1 cup caster sugar

1½ teaspoons baking powder

1 teaspoon baking soda

3 large ripe bananas, mashed (about 1½ cups)

2 eggs

½ cup multiflora honey (Honey can be purchased from The Bee Hive) 

½ cup natural unsweetened yogurt

2 ½ cups “00” Italian flour (or high grade flour)


Preheat the oven to 180C.

Butter the bottom and sides of a cake tin.

Beat the butter, sugar and honey until white and creamy, and add the eggs, one at a time. Fold the mashed bananas into the mixture gently, with a spoon, until only just incorporated. Set aside.

In another bowl, sift together the flour, salt, baking powder and baking soda.
Fold the flour mixture gently into the banana mixture, and stir in the yogurt until just combined.

Pour the batter into the cake tin. Bake for 50 minutes to one hour. Cool the cake in the tin for 15 minutes before turning onto a cooling rack.

Serve at room temperature with some mascarpone cream

Honey Brownies

1/2 cup butter

50g chocolate

1/2 tsp salt

1 tsp vanilla essence

2/3 cup of your favourite honey,Rata or Rewarewa made a nice Honey option.

1 1/2 cups of flower

1 tsp baking powder

2 eggs

1 cup chopped nuts


1/ In a small pan, melt chocolate, butter,salt and vanilla. - MIX WELL

2/ Blend in honey,flour and baking powder.

3/ Add eggs and beat well.

4/ Add nuts and pour into a greased cake pan.

5/ Bake at 160 degrees C for 35-40 mins or until centre test indicates cake is cooked.

6/ Cool before cutting or icing.

This mixture is quite runny, but cooks up well.


Rice Bubble Crunch    

100g Butter

100g sugar

2 Dsp of your favourite clover or wildflower field honey

(Honey can be purchased from The Bee Hive) 

5 cups of rice bubbles


1/ Bring the butter, sugar & honey to the boil, and cook on low for 7 minuets

2/ Place rice bubbles into a bowl, and pour the hot Honey mixture over and combine quickly.

3/ Press into a greased swiss roll tin,cut while hot.



Honey Berry Waffle Sandwich


  • 1-1/2 cups - fresh berries, divided *
  • 1 Tablespoon - butter
  • 1/3 cup - honey
  • 8 - frozen waffles, toasted

Purée 1/2 cup berries in a blender or food processor; set aside. In a small saucepan over medium heat, melt butter. Add honey and bring to a boil; simmer 2 to 3 minutes, then add berry purée. Continue to simmer 2 to 3 minutes more until syrup thickens slightly. Set honey syrup aside and keep warm. For each serving, place 2 waffles on plate. Top one waffle with 1/4 cup fresh berries. Drizzle with 1/4 of syrup and top sandwich with remaining waffle.

*Raspberries, strawberries and blueberries work well.
